More fabulously healthy endo dishes

More treasures from the Endometriosis cookbook by Caroly Levett from www.endo-resolved.com:

A raw and dairy-free cream of mushroom soup, made with crimini mushrooms, avocado, tomato, a huge amount of herbs (basil, parsley, cilantro, mint), garlic, nama-shoyu (a raw, organic, unpasteurized soy sauce) and fresh grapefruit juice. The recipe also included a red bell pepper which I left out because we didn't have any. Tasted great anyway, loved it.

This one's good for a laugh: a very tasty Thai veggie curry - with my first ever home made pasta, a horribly misshapen dandelion fettucini that I obviously didn't roll out thinly enough... (not a recipe from the Endo Cookbook, I hasten to add, although of course it was mostly wheat free, consisting only of dandelion greens, eggs and rice flour, with just a bit of whole wheat flour mixed in).Quinoa with basil, parsley, spring onions, roasted carrots and pine nutsRitesh's spinach daal, not from the cookbook but perfectly endo-safe (and super-tasty)and some mini cucumber-chevre sandwiches with some splendid peppered Spanish goat cheese (the only kind of dairy allowed)

well, I had to buy all the ingredients at the store and you can pick them in your garden - so yeah!!
